As I talked about in my Instagram post, I’ve been so busy lately that I’ve just been forgetting to eat! And what actually brought my attention to this, was the way I’ve been feeling. I’ve been feeling tired, grumpy and just haven’t had a lot of mental clarity. So, I decided that I needed to meal prep!
I managed to make 16 meals in under 2 hours!! Technically it was 20 meals if you count the fruit I put into zip lock bags to prep for my breakfast smoothies. I know right! I thought meal prep was time-consuming and tedious too. But it has actually been a lifesaver this past week!
I must just mention that these meals lasted me about 7 days because I froze some of them, and even though it looks like I eat 4 meals, one smoothie, and a million snacks a day in this picture, this layout was the only way I could fit it on my very small table. #apartmentlife.
I still like some spontaneity in my life so I froze some of these meals, and I made sure that each would only give me four servings because I didn’t want to be eating the same thing every. single. day.
The first recipe is a protein-packed vegetarian Zucchini Slice that I mostly had as a post-workout meal, and once as a quick and easy breakfast option.
I’m all for food that is super easy to make but still tastes really good. My second meal prep recipe is something I love having for dinner and is packed with protein and veggies. This Thai Green Curry recipe does use a recipe base, because like I said, I’m all for super easy food. I changed the ingredients and the ratio of the coconut milk slightly to suit my taste.
My next recipe has become my favourite thing to have lunch, even when I haven’t meal prepped it – it’s so easy to make! It’s technically a salad. But calling it that is a little boring so I’m calling it my Macro Salad. It’s colourful and has a good amount of protein, carbohydrates, and fats. Plus because it’s a raw salad, it’s super high in fibre too!
This last recipe is my favourite go-to vegan lunch or dinner. I’m no chef, (which makes it kind of ironic that I am writing a recipe post, but let’s just ignore that) so this chickpea burger recipe is not my own, but it is delicious! I found this recipe in a video posted by Sarah’s Day. I changed up one or two ingredients, but the genius behind this tasty creation is her.

Having made these meals over a week ago and experienced the meal prep life, I can honestly say I am converted. It may seem to take a lot of time but the amount of time it saves during the week is so worth it!
